  • Poultry: Poultry, such as chicken and turkey, is often cooked for between two and five hours at around 250 degrees.
  • Seafood: Whole fish are generally smoked at 225 degrees for around an hour, and other seafood, such as lobsters, oysters, and scallops, are cooked at the same temperature and take about 45 minutes.
